Pectin-based edible coating plays a waterproof role in fruit preservation, which have the functions of preventing moisture transfer and flavor loss, and improving hardness. The production of commercial pectin from passion fruit peel, seeds and bagasse could not only eliminate the problem of waste, but also provide a new source for pectin industry. This time, I tried making a concentrated syrup before adding the pulp, cooking them together just long enough for the sacs to rupture, and then rapidly cooling the syrup in an ice bath.
