Conflict of Interest Over dessert like Passion Fruit Ice Cream, yogurt, custard and panna cotta - or like a dressing for a fruit salad. Passion Fruit Pulp is everything inside the fruit – the seeds and the delicious yellow puree! You can eat the seeds (the entirety of the pulp of the fruit) or you can remove the seeds to make passion fruit puree.
Passion fruit sounds exotic, but it doesn't look that way. At least at first. It grows on climbing passion flower vines in tropical regions like Australia, New Zealand, and Hawaii, and from the outside, it looks small and egg-shaped, with yellow or purple skin. You might confuse it for a small lemon or plum -- until you slice it in half.Place the mascarpone, heavy cream, powdered sugar and vanilla bean paste into a mixing bowl or the bowl of a stand mixer. Beat on a low speed setting until the frosting holds peaks. Don’t over-whip. Stir passion fruit pulp into the frosting and keep chilled until you are ready to use it. Assemble the Passion Fruit cake
At this point you can either strain the syrup and discard the seeds, or keep both the seeds and syrup together as I like to do. If you mix passionfruit pulp with the same amount of sugar, stir on low heat until sugar is dissolved and pour into sterilized glass jars and seal you don’t need pectin. The pulp of passion fruit can be both eaten or commonly juiced. The juice is often added to other juices to enhance its aroma. The passion fruit peel accounts for about 51% the fruit wet weight. Because of the large amount of fruit juice production, many thousand tons of seeds, pulps, and peels as agricultural coproducts during juice extraction. Peels, as the major wastes, have become an important burden on the environment. With the development of economy and people’s awareness of environmental protection, peel has been used extensively in the industrial production of pectin. It is a widely used functional food raw material with high value in reducing cholesterol levels, reducing hyperlipidemia, and hypertension, improving glucose tolerance and insulin response, helpful to gastrointestinal health and the prevention of some cancers. Pectin is used as a nutritional fiber delivery, gelling agent, and edible coating and stabilizer in the pharmaceutical, cosmetic and food industry, especially in the production of confectionery, jelly, and other products ( de Souza et al., 2018). Pectin-based edible coating plays a waterproof role in fruit preservation, which have the functions of preventing moisture transfer and flavor loss, and improving hardness. The production of commercial pectin from passion fruit peel, seeds and bagasse could not only eliminate the problem of waste, but also provide a new source for pectin industry. Conclusions and Future Research Directions
Method
This precious fruit is loaded with vitamin C, vitamin A, calcium, magnesium, phosphorus and potassium. There are many benefits passion fruit has : it lowers cholesterol and diabetes risks; supports kidneys, nerves, heart rhythm and muscles. I’ve also experimented with turning passion fruit into a syrup, but the problem has always been that the high temperatures involved in making a syrup destroys a lot of the aroma and changes the vibrant orange color to a caramel brown. This time, I tried making a concentrated syrup before adding the pulp, cooking them together just long enough for the sacs to rupture, and then rapidly cooling the syrup in an ice bath.
Although I made passion fruit preserves with sugar and pectin, this fruit pulp can be preserved in several other ways : I did not plan to make passion fruit post. As I said at the beginning I was so carried away with real shopping that recipes with passion fruit bumped unexpectedly ! and I am so happy it did !
